LA TANA DEL CONIGLIO - ERIKA CARTABIA

 "La tana del coniglio" is Erika Cartabia's blog. Born in Origgio (Varese) in 1982, Erika's passions are kitchen and photography.
After a job experience in the marketing sector, in 2013 she decided to turn cooking into a full-time job.
The Food Blog "La tana del coniglio" was born in November 2009, just for fun, as a simple collection of recipes, but quickly turned into a place for culinary adventures and experiments.
The curious origin of the name comes from the choice to pay tribute to one of Erika's favorite animals, the rabbit, and the love for literature and the famous novel by Lewis Carroll "Alice in Wonderland".

THE RECIPE

INGREDIENTS
½ glass of milk ½ glass of water
100 g of Piave Oro Del Tempo
1 packet of saffron powder
500 g of fresh gnocchi
100 g of sweet bacon
1 pinch of salt
1 knob of butter


PROCEDURE
Grate the Piave cheese and keep it aside. In a pan sauté the bacon cut into cubes until crispy. Remove from heat and keep aside. In a large non-stick pan melt the butter. Add the gnocchi. Pour the milk, water and add a pinch of salt. Add the saffron and cook over a high heat for a few minutes, then add the grated Piave cheese. Stir and finish cooking. Remove from heat and serve the saffron gnocchi with Piave. Complete with the crispy bacon, a generous sprinkling of grated Piave cheese and enjoy them hot and stringy!

PIAVE PDO ORO DEL TEMPO

Piave is a hard PDO cheese, produced in the province of Belluno only with high quality raw materials, without dyes and preservatives. It is characterized by a sweet and intense flavor, never spicy, and a full aroma reminiscent of herbs and alpine flowers. Moreover, Piave Dop cheese, thanks to its genuineness, to the traditional production techniques and to the connection with the territory, is an excellent partner for the Mediterranean Diet.
 
In this recipe we are using Piave Oro del Tempo, aged 12 months. A product for true connoisseurs, with an incomparable taste.
